PRIMARY PRODUCTION: In the years 2005 and 2006, farming and agriculture will undergo a series of very important changes. On 1 January 2005 the general regulation affecting traceability came into effect and on 1 January 2006 the regulations governing hygienic conditions of food production came into effect as well. These two legislative innovations fully introduce the mentioned sectors into the wide spectrum of the world of food safety.
WAREHOUSING: The food products must be conserved in conditions that are subject to quality management programs that ensure the continuity of conditions in such a way that the best characteristics of the product are preserved. To achieve this, it is fundamentally important that aspects such as temperature, air quality and storage are well controlled
TRANSPORTATION: For the product to maintain its characteristics between origin and destination, transportation conditions must be supervised and controlled as well. The inspection of temperature, transportation times and cleanliness is crucial.
PROCESSING: Whether at the beginning or the end of the food production chain, the strict supervision of this stage is necessary as contaminations which may be impossible to eliminate later can mix with the product, thus directly attacking public health, something which is certainly not desired.
DISTRIBUTION: As one of the final links of the food product industry chain, the responsibility of this sector is decisive as the conditions of the final product depend on its distribution prior to consumption. As a result, supplier quality control is fundamental in avoiding the consequences of errors which would be beyond the control of the producer.
CATERING AND RESTAURANT SECTORS: As in distribution, an effecient control over all of the phases of the production chain is completely useless if last minute carelessness and negligance provoke consumer problems. Control of this type of industry must be very strict, as specific national legislation exists that include both supplier control as well as control of personnel, equipment, etc. All this is reflected in the General Quality Plans.
